“Stuff Yo’ Peppers” Recipe

Mmmm, who doesn’t love stuffed peppers? Well I didn’t before I created my very own fun, tasty, yet healthy recipe. Check me out..

Let me just start by stating that I did not follow a recipe!  In fact, I didn’t even look at one, but I had eaten them before in the past and remembered the main ingredients (also giving it a little spin of my own.) Plus, I thought to myself, “how hard could it be to stuff a pepper with ingredients that I already love?”



  • A variety of peppers (any kind- green, red, yellow, orange)
  • Ground Turkey
  • Olive oil
  • Brown rice
  • Fresh Garlic
  • Onion
  • Mushrooms
  • Fresh Spinach
  • Bag of frozen corn
  • Diced Tomatoes  (partially drained-no salt added)
  • Tomato Sauce
  • Seasonings of your choice



My cooking directions:


  1. Sautee garlic, onions, mushrooms in olive oil
  2. Add the seasoned turkey meat
  3. Add the pre-washed fresh spinach and let it cook down
  4. Add the rice (cooked) and the 1/4 the bag of the rinsed corn
  5. Add the partially drained diced tomatoes and stirred
  6. Stuff the seeded and rinsed peppers with the ground turkey mix
  7. Top the peppers with tomato sauce and bake for 20-25 minutes at 350 degrees
  8. And wallah…Enjoy!


It was fun, simple, delicious and most of all…HEALTHY.  My challenge to you is to ‘stuff yo’ peppers’ and tell me how you like it. 🙂
